The Great Blizzard of Oz and the Wicked Witch of the Flu

Warning: snow pic overload...I know everyone is over these but really it is amazing to see so much snow in these parts. Especially after being in a drought for so long!

So the last 10+ days have been some of the longest I have experienced. Matter of fact this entire month may be the longest month ever, is it ironic since it is the shortest? Never sure on my irony. :)

Yeah, yeah, we have all been sick around the globe, but for me and mine we are seldom ever sick. Ever. I have never realized how for granted I have taken our health until recently. It all started in January when Lo puked in the middle of church, followed by mommy and daddy getting slammed. We had 1 relatively good week and then right before their birthday party MW comes down with croup. Which is such a scary thing to listen to; I was so afraid he would just stop breathing! Insert sinus infections (me) and now the actual flu.

Right before the first round of the "Blizzard of Oz" hit MW was acting really lethargic and whiny. Then he kept complaining his wrists hurt (namely the previously broken one) along with a high fever. So high momma didn't need a thermometer to tell me. I didn't get it. Then he threw up (which apparently is common in kids with the real flu, not just the tummy bug) and then had some terrific diapers every.single.night. Still didn't get it. We just snuggled on the couch and watched Kai Lan and Deigo until I wanted to scream!

In the midst of this the snowstorm hit. We got around 12 inches the first time. I hadn't seen that much snow since I was a little girl and it probably wasn't that much! It was awesome and we had fun playing in it.

These were on Wednesday afternoon when we just got 4ish inches and were in our "lull" before the overnight "Blizzard" hit.

Thursday morning we awoke to this:

I couldn't believe it. Our meteorologists are always so wrong, that I wasn't going to believe it until I saw it.

Best "hill" we had to sled on. HA!

Later that evening we went out again for more exploring. They love to explore out back wooded area.

Daddy had fun teaming up with the neighbors and shoveling 5 driveways!

Although Micah loves the snow he wanted to just go in. So we did and there we laid for the next 2 days. Mommy STILL had no idea...just assumed it was another tummy bug.

By Sunday round two of the hyped up "Blizzard of Oz" that never really came was slated. As was apparently Lo's turn at the flu. She tossed her cookies that morning and then proceeded to lay on the couch just staring at the wall. If you know my child at all, she is NEVER like that even SICK! That night she woke up screaming her legs hurt, her fever was off the charts and well let's just say I am glad she still wears pull-ups at night. I get her cleaned up and a little Motrin for the pain and put her in bed with me. As I am drifting off to sleep I finally put two and two together it's the flu. Now I feel bad because MW was trying to tell me and I just didn't get it. Of course thanks to the Blizzard that was completely missed forecast ..I mean they were WAY off, embarrassingly so, the entire state including doctor offices shut down for nothing! And I couldn't get her in to get tested. Oh well, she still would have had to suffer.  By Tuesday I am down.

Monday night we did finally get more snow, just not the 12+ inches of blizzard conditions that were promised. Should I be sad or happy about that?!?! HA!

Tuesday surprisingly Chad got another snow day so we went out for a bit to bring some joy to a little girl's face!

Finally made some larg{er} snowmen. Are first one was so tiny he drowned in the overnight snow. :(

The trees were gorgeous, like Bob Ross painted them! My photog skills do them ZERO justice.

Micah was feeling better and decided to help daddy shovel with is sand scoop. HA!

My neighbor, is so creative I hate her. Just kidding. :) They made their "snow" family and one kid is doing a handstand, so we posed by it and pretended it was ours! HA!

So here we are, 10 days later, but who is counting, still suffering the backlashes of all of this as the kids and I keep getting flare-ups. :( I just want to be well. For good. I promise never to take our health for granted again. Amen.

Leighton has been bored and sad that she didn't get to play in the snow too much and with her friends. It is sort of a bummer, all this snow and we haven't been able to really enjoy it. But I am trying to teach her to be appreciative of what she did get to do and enjoy. Life is not always sunshine and roses.

But I have secretly enjoyed every.single.second of snuggle time with Micah and Leighton when they were at their neediest. I have very busy kids, and they don't sit still long enough for me to hold, especially Leighton, so that is our silver lining.

Two kids feeling a bit better. I love how they love each other. Sometimes when I wonder why I had two, I just think of these moments.

Speaking of silver lining, have you all seen that movie "Silver Lining Play book" so good. I loved it and it was a fun night out with some girls to escape the sickness for awhile!

Good-bye February and Hello to what I hope is a HEALTHY! March!!

Bierock Casserole Recipe

Recently I made biercok casserole for my daughters birthday, per her request. I offered Chick-Fil-A, but she insisted on the casserole. Lots of people have been requesting my recipe, so here you go.

Please note that I cook like Rachel Ray and just guesstimate on ingredients...really is there any other way to cook?! HA!

Bierock Casserole

Ingredients:
1# ground beef
1 roll (1#??) of ground sausage. I get mild, but that is your call.
onion
1 pkg of coleslaw mix/greens,
sharp cheddar (I have subbed other types of cheese b/c that is what I had, but the sharp cheddar makes it the best!)
2 tubes of crescent rolls or the sheet kind of dough (I prefer the sheet kind)

Directions:
Pe-heat oven to 350F
In a  greased/Pam 9x13 pan put 1 pkg of crescent rolls/or sheet dough on bottom of pan. I poke holes in it with a fork to keep it from bubbling up. (Your welcome)
Bake the dough for 10ish minutes just to slightly crisp it up, does NOT need to be fully cooked.
Meanwhile, boil the coleslw mix. I have no set time on this, when it smells cabbage-y it is done. Drain Well or it will make your casserole soggy.
Brown both meats together with some chopped onion if you like.
I drain excess fat off the meats.
Then combine the cook meat with the well drained coleslaw mix with 2ish cups of cheddar cheese (the amount that comes in a small bag--we shred our own, so I just guess.)
Mix it all up and dump on top of the partially cooked crescent rolls.
Then top with the other tube of crescent rolls.
Bake for 20+ minutes. Want the top dough to be golden brown.
Serve and Enjoy.

Note I prefer the sheet dough b/c crecent rolls triangles are hard to smooth out and not make a big wreck of it, but it can be done, just work with it.

Let me know if you have questions. Sorry no pic...I just never think to take  pics of my food. Ha!

Kids Say the Darndest Things

While driving she sees a car that looks like Meg's Saturn...

Leighton: I like Meg's car. Saturns are all over. I don't like the KU bird on it though.
I like papa's car better because he has a WU shock AND a K-State Wildcat now. {We got my dad one of those "house divided" license plates for his birthday.}

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Micah was running around the living room when all of a sudden he just STOPS!
MW: {shouting} POTTY!! RUN FAAAAAAAAASSSTT!!!
proceeds to bolt down the hallway to the bathroom, where he promptly pulls down his underoos, climbs up all by himself and goes! {HUGE MILESTONE!!}
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Leighton is telling me this all the time:
"Don't worry mom I will take care of MY brother, he is MY son."

I was telling Lo that Grammy and Meg were going to babysit, but Meg was sick {with a sinus infection}, so she may need to help take care of Meg instead.
Leighton: "Mom, I will tell grammy that I will babysit my Micah, but I can't take care of Meg TOO!" HA!

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
One afternoon, ending in "y" I was telling Chad how I dislike our poodle Tucker. I can't stand his barking and our next dog can not be a barker...we should get a big dog because they don't bark as much as little dogs.
Chad: "You know what animal doesn't bark? A CAT!"
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Lately Leighton has been into chewing on things-her hair, her sheets, her clothes, and her lovie, poodle. I can NOT tell you how gross this is. I repeatedly tell her it is disgusting and not to do it.

Later she comes up to me and says:
"Mom, you won't believe this but Ella {her stuffed Elephant friend}, chewed on poodle! You are going to have to wash poodle because now he smells like vomit!"

M: oh "ella" chewed on poodle did she?!
Lo: "Yes mom she did, I told her not too and now she is going to time out."
M: "well as long as you are dealing with it..."

So many things wrong with this, but it is too funny to be mad.

Leighton 4.0

Really?
Am I actually typing out a 4.0 version of Leighton right now.
I am speechless. Really. I have nothing.
She was my teeny tiny baby just yesterday and then I blinked. Literally, blinked and now she is 4.
You are such a grown up little girl. I just stare at you all the time in amazement at how we made it here and terrified of what the next 4 years will bring. Less attitude? Yeah, probably not.

The other day I saw this post:

I totally feel that way, but in spite of me you are turning into a beautiful, sweet, smart-assy little girl. {Yes, I just called her a smart ass because she is. I thought I had sassy down, but wow!}

You love to be a little mommy telling me repeatedly how Micah is your son.

Your intelligence level and skills are on par with other kids--I assume, I actually have no idea since you don't and won't be going to pre-school, but you seem smart enough to me and have eventually caught on to all the big concepts like ABCs, 123s, writing, colors and what have you.

You are very creatively minded. Now that you seem to exceed expectations on. You have some serious mad coloring and crafting skills.

Still not potty trained at night. :( I remember last year being sure that by this time next year it would be a different story...{I don't need or want advice on the matter, it is what it is. I am just stating it for the record. It is totally normal and I am pretty much ok with it...mostly. ;) }

Stats: If I ever remember to get a doc appt. then I could tell you...
ht: 3ft 2 in?!? 3ft 1.5in {again WAY off. ;) }
wt: 27#?!?!? 30#
She and MW aren't too far apart on that.

Now for the Interview with a 4 year old.
Normally I would type out all the questions and answers and perhaps will someday, but if you want to know you will just have to find 10 minutes to watch.
